描述 | Damascenone is a norisoprenoid ketone mainly found in red wines. It occurs naturally in tomato and grapes[1]. A detailed investigation into the effect of SO2 demonstrated that loss of damascenone in model wine was directly related to the concentration of added SO2 but was essentially unaffected by small changes in pH[2]. The effect of β-damascenone on Pinot noir aroma was less clear, as perception seems to be heavily influenced by wine matrix composition[3]. In hydroalcoholic solution, beta-damascenone (Damascenone) enhanced fruity notes of ethyl cinnamate and caproate and masked the herbaceous aroma of IBMP[4]. UVR-induced sunburn was prevented by a single oral β-damascenone dose as low as 20 μL (0.95 mg/g body weight)[5]. |
