描述 | 2-Hydroxy-3-methylbutanoic acid is a close structure analogue of GHB (gamma-hydroxybutyrate), which is a naturally occurring neurotransmitter and a psychoactive drug[1]. A method for the quantitative determination of 2-hydroxy-3-methylbutanoic (2OH3MB) has been optimized, validated and applied to a set of wines and other alcoholic beverages. Concentrations ranged from the method detection limits to 519 μg/L for 2OH3MB, which may have relevant sensory effects. 2OH3MB was not found in distillates but was present in beer. 2OH2MB, 3OH3MB and 3OHB were found in unfermented grape derivatives[2]. |
